Salsa criolla is a sauce that originated in Peru, but is incredibly popular within Argentine cooking. It is fresh and tangy, which makes it the perfect accompaniment to many beloved Argentine dishes. Quick and simple to make, composed of ingredients that you would find in almost every kitchen, makes it a staple in many households across Latin America. It is the perfect way to elevate a dish - whether that's with steak, grilled vegetables or simply enjoyed with tortilla chips. It can be adapted and adjusted to suit different tastes but here is a recipe for how we like to make it:
1 Pepper (red or green)
1 White onion
1 Tomato
1 Garlic mince
¼ cup/60ml of olive oil
3 tbs red wine vinegar
1 tsp chilli flakes
1 tsp fresh oregano
Salt and pepper to taste
Finely chop the pepper, onion and tomato. Put all the ingredients together in a bowl and toss well. Store in the fridge.
